Whew! That’s a long title. Be forewarned, it looks kind of yucky, but it is SO tasty good and protein-packed.
This is my go-to after a workout (or for breakfast) this time of year. Super easy, fast and yummy.
I specifically use the PurePaleo Protein from Designs for Health because it’s quite creamy when you mix it.
Only one small bit of prep-work needs to be done, and that is to take a can of organic, full-fat coconut milk (in the ethnic foods section), scoop the most solid, fat bit into a blender or Magic Bullet (whatever easy hand blender you have) and whip it! It may not whip into cream straight away, but that’s okay! Transfer into a glass jar and put into fridge, it will thicken into a “whipped cream” in there. (You can store the extra liquid portion in a jar as well, and use it for smoothies or drink it straight)
Now for my slurry.
In a bowl:
Mix this gently with a spoon and it should get nice and smooth and creamy.
(If you use the coconut milk from a can and it’s not whipped, the protein power may clump)
Sprinkle with a little cinnamon (I adapted that part of this recipe from an Instagram post that Mike Mutzel did some time back. Cinnamon helps with blood sugar regulation!)
Sit down and gobble it up post-workout or for breakfast!
